Ingredients:

  • 2 2oz cup Aveyo Chipotle Mayo

  • 2 eggs, scrambled

  • 1/2 cup roasted vegetables (e.g., bell peppers, zucchini, and mushrooms)

  • 1/4 avocado, sliced

  • 1 tablespoon salsa

  • Salt and pepper to taste

DIRECTIONS:

  1. Scramble the eggs and set aside.

  2. In a bowl, mix the roasted vegetables with Aveyo Mayo.

  3. Add the scrambled eggs on top, then layer with avocado slices and salsa.

  4. Season with salt and pepper and enjoy.
